Chanar Dalna

Ingredients:

1 tblsp ghee, 250 gms cubed cottage cheese (paneer), 1 medium cubed potatoes oil for frying, 1/4 tsp turmeric powder, 1 tsp ginger paste, 2 - 3 green chillies salt to taste,1 1/2 tsp cumin seed paste, 1/2 cup milk, 1/2 tsp cumin seeds, 1/2 tsp sugar, 1/2 tsp garam masala powder, 1 cup water

Method: Heat up oil and fry the potatoes lightly and keep aside.Fry the paneer in the same oil and put it in warm water.Heat up the ghee in a vessel, mix in the cumin seeds and let it splutter.Mix in the cumin paste mixed with a little water, ginger juice and turmeric powder.Stir fry for 2 minutes.Mix in the potatoes, green chillies, garam masala powder, sugar and salt and cover and stir fry till the potatoes are tender.Take off the paneer from the water and mix in to the potatoes.Mix in milk and the remaining water and allow it to simmer (boil slowly at low temperature) for another 2 to 3 minutes.Serve hot.

Besan ki Sabzi

Ingredients

* 100 gm: Besan (Gram flour)
* 3 : Tomatoes medium size (finely chopped)
* 2 : Onion medium size (finely chopped)
* 4 : Green chilies (finely chopped)
* 1 tbsp: Ginger and garlic paste
* ½ tbsp: Turmeric powder
* ½ tbsp: Mustard paste
* ¼ tbsp: Red chili powder
* ¼ tbsp: Coriander powder
* A pinch Asafoetida
* 1 tbsp: Cumin seed
* ½ tbsp: Carom (Ajwain) seed
* ¼ tbsp: Gram masala
* Oil
* Salt to taste
* Water

Method: Mix well besan, 2 green chillies, carom, 1/8 tbsp red chili powder and 1 tbsp oil.Add water into besan to make dough.Make a 1 cm diameter round and 5-6 inches long (like seekh kabab).Put it into boiling water and boil for 10 minutes.Take out the water and cut the besan round into small pieces and keep aside. Aloo Chutney Wala

Ingredients

For Chutney- Sweet mango pickle, mixed pickle and mint chutney in equal quantities, Potato stuffing, Grated compressed cheese, Cashew nut, Raisin, Coriander leaves, Turmeric powder, Salt

Main preparation
o Potatoes
o 2 tsp: Yoghurt
o 2 tbsp: Chutney
o 4 tbsp: Sliced onions
o 1 tsp: Ginger garlic paste
o 2 tbsp: Clarified butter
o ¼ tsp: Cumin seeds
o ¼ tsp: Turmeric powder
o ¼ tsp: Red chilli powder
o 1 tsp: Coriander powder
o 2 tbsp: Tomato puree
o Salt to taste
o Water

Method:
For the Chutney
1. Mix sweet mango pickle, mixed pickle and mint chutney together. The chutney is ready.
For the Potato Stuffing
1. Mix grated cheese, cashew nut, raisin, salt, coriander leaves and turmeric powder together. Then lightly sauté them in a pan. The stuffing is ready.

Kansar

Ingredients:
Broken Wheat- 1 cup
Mishri Powder- 1/2 cup
Ghee 1-2 tbsp
Cardamom 1/2 tsp
Almonds 6-7 pieces
Saffron a pinch
Nutmeg-1/4/tsp
Cloves-3-4 pieces
Cinnamon1 small stick

Methods: Soak Broken Wheat for 1 hour in Luke warm water. Heat 1 teaspoon Ghee in a pan and add Cinnamon, Cloves. Add 1 1/2 cup water. Add Broken Wheat and cook it for 10 minutes. More water can be added if needed. Add Cardamom, Saffron, and Almonds and cook it for 2 minutes, Check if Broken Wheat has cooked nicely and if so put off the gas. While serving sprinkle powdered Mishri and little Ghee on top.

Corn Masala

Ingredients:
Tomatoes-6, Corn- 2 , Green chilli- 1, Coriander- ½ tbsp, Bay leaf, Cloves, Red chilli powder, Tumeric, Asafoetida, Rock salt, Peanuts roasted, Water.

Methods: Steam corn, tomatoes and grind it to make puree. Chop green chilli. Heat the pan and put the bay leaf, cloves, peanut and add water. Add tomatoes puree, rock salt, red chilli powder, tumeric, green chilli. Cook for 2 minutes off the gas. Now add corn and coriander. Serve it.

Chocolate Burfi

Ingredients:
4dl Condensed milk
75g Butter
100g cocoa powder
4 tablespoons mixed nuts
¾ -sugar

Methods: Pour condensed milk into a thick bottomed pan. Add butter, sugar and cocoa powder into the pan. Stir constantly on gentle heat till the mixture leaves the sides of the pan. Pour evenly into a buttered dish. Allow to cool and set. Cut into squares. Sprinkle the nuts on it.

Chocoballs

Ingredients:
Hazelnuts, Walnuts,Almonds, Black Dates, Raisins, Nutmeg, Honey, Cashew powder and Pineapple for garnish.

Methods: Grind Hazelnuts, Walnuts and Almonds to make a powder. Finely chop Dates and Raisins so that they can be smashed easily, mix the Nuts powder and smashed dry fruits. Add Nutmeg powder, honey, mix the above with hand and roll into different shapes. Coat it with Cashew powder and decorate it with small pieces of fresh Pineapple.

Gado Gaelo

Ingredients:

Steamed rice- 1 cup
Pumpkin- ¼ cup
Sprouts- ¼ cup
French beans- ¼ cup
Carrots- 2
Cumin-1 tsp
Coriander powder- 1 tsp
Ginger-1 tsp
Salt as per taste

Peanut sauce:-
Peanut-1 cup
Coconut milk- 1 cup
Lime-1
Chilli-1

Methods: Mix everything and serve it.

Chikki

Ingredients:
Jaggery - ½ cup
Peanut - 1 cup
Arabic Gum-1 tbsp

Methods: Roast peanut and grind it into powder. Roast Arabic Gum. Melt Jaggery now add Peanut powder and Arabic Gum. Mix well and spread in to a plate cut into diamond shape and serve it.

Broccoli Potato Soup

Ingredients:

Broccoli -10 florets
Potatoes-2
Black pepper as per taste
Cinnamon as per taste
Salt as per taste

Methods: Steam broccoli and potato separately. Grind them in liquidizer in a puree form. Boil some water with salt, black pepper and cinnamon. Now in boiling water add the puree cook it for 5 minutes and serve it.

Healthy Granola and Fruit Snack Recipe

Ingredients:

7 3/4 cups rolled oats (oatmeal)
2 1/2 cups chopped peanuts
2 cups sunflower seeds
1 1/2 cups flaked coconut
1 cup butter, melted
3/4 cup honey
1 teaspoon vanilla extract
3/4 cup brown sugar, packed
3/4 teaspoon nutmeg
1 1/2 teaspoons cinnamon
1 teaspoon salt
2 cups raisins
1 cup dried apricots (diced or sliced)
1/2 cup dried banana chips

Methods: In a large baking dish, combine the oats, peanuts, sunflower seeds and coconut, mix ingredients together well. In a microwave safe dish, melt butter, stir in honey and vanilla extract. In a small bowl, combine packed brown sugar, nutmeg, cinnamon and salt. Sprinkle sugar mixture over the oat mixture that is in the baking pan. Pour the melted butter mixture over top and stir to combine all ingredients in the pan. Place baking dish in a 275 degree oven for 20 minutes.
