Ginger Honey Chicken Recipe


  1.     1/2 teaspoon salt
  2.     3/4 teaspoon ground ginger
  3.     4 chicken thighs (about 1 pound), skinned
  4.     1 tablespoon minced peeled fresh ginger
  5.     3 tablespoons honey
  6.     1 tablespoon fresh lemon juice
  7.     1 tablespoon low-sodium soy sauce
  8.     Cooking spray


Preheat broiler.Combine salt and ground ginger in a small bowl; rub chicken with mixture.Combine minced ginger, honey, lemon juice, and soy sauce in a small bowl; stir well with a whisk.Place chicken on a broiler pan coated with cooking spray. Broil 5 minutes; turn. Baste with honey mixture. Broil 3 minutes; turn. Baste with remaining honey mixture. Broil 3 minutes or until chicken is done.Brush drippings from bottom of pan onto chicken.
